I FOUND A PESTO RECIPE!!!!!!
Well it isn't so much a recipe as it is a throw it together goodness but here it is.
Some basil...like about 2 cups of whole leaf basil
Some cilantro....like about 1/4 of a bunch
a handful of almonds
about 1/4 cup of good parmesan cheese (i used fresh because let's face it- the flavor you get from fresh FAR outweighs that in a Kraft can)
and a drizzle of olive oil
Food process that for a bit until it's a thick consistency...that of set pudding.
Mix it with some noodles, put it on a grilled cheese sandwich, do with it whatever you want. Eat it plain even.
HOLY GOODNESS IT'S AMAZING! :) And it smells PHENOMENAL!

Ok. I admit it. I suck at this blogging thing. Blogging a meal menu for every week of the year is something that people who don't have small children or husbands (I realize these fit into the same category most days), don't go to school full time, or have a job (and YES being a housewife DOES count as a job!). People who, you know, have this thing called time on their hands. Or people who are directly related to superman/wonder woman.  And I am not. I checked into it last week when I was feeling a little Super Wonder Womanish.
So anyway- as most of you who are friends with me on Facebook have read in my recent postings, I am also not related to people who claim to be researchers of plants. If I were, I would've known to research plants you are planting BEFORE you plant 15 plants of them. Now, normally I wouldn't have been so worried about this because I am proud to say- I have no green thumb. I could honestly find a way to kill a plastic plant. Really. Don't believe me? Here's the proof, my friend.
Yep. That's our plastic plant. And every book we own off the bookshelf on top of the plastic plant. Did I mention my 2 year old?!?
Luckily for me, however, this 2 year old LOVES to be outdoors. LOVES to water the plants. And LOVES to remind me that we haven't done it for the 200th time that day. Thus, my 15 (not exaggerating) plants of Basil have indeed thrived! Problem is, I'm not sure what I'm going to do with it all. So here's the week's menu- centered around- you guessed it! BASIL!

I'm just posting dinner recipes right now. I'll post another thing about breakfast and lunch here pretty soon. I've been trying a new nutrition plan out the past 4 weeks and can honestly say I love it- down 10 pounds and 7 inches and still dropping! WHOOP WHOOP! NOT destined to be a fatty after all! Who knew?!? Anyway- Basil.

So tonight I burnt the shit out of the quinoa, which was supposed to be our protein source due to the fact that everything else I have in the house is frozen. Also, Mr. 2 year old and I were swimming tonight from 6-7:30 and didn't eat until after that. Also, as a side note-that's not the most nutritious thing ever either, so I don't recommend that. But, normally you could do some quinoa, mozzerella cheese, chopped tomatoes and chopped basil  mixed with some spaghetti sauce and BAM! You've got some real Emeril Lagasse crap goin on there.
Instead, because remember I burnt the quinoa, I took slices of bread- spread about a TBSP of spaghetti sauce on top, laid some basil over that, sliced tomatoes, and topped with mozzerella cheese and broiled it for about 3 minutes. Watch this or you'll burn it to bits too and have to call for take out, also not the healthiest of options. Pair that with some blueberries and maybe a chicken breast or something and HELLO! Giada DeLaurentis. A couple weeks ago I did this same thing but substituted the bread for zucchini sliced in half long ways. DELISH!  And if these chef's happen to be reading this and recognizing their names- maybe a little help by being on one of your cooking shows would interest our readers a bit more. Just think about it.

Another basil option is pesto mixed with chicken for chicken pesto sandwiches. It's summer people- we're not talking 9 course dinner meals like we do in winter. We're busy, we're not hibernating and storing extra blubber to keep us warm. We're going light, but fulfilling and quick cause we got things to do now. Like swimming. Or training for a 5k which is a whole other story for another blog.
I haven't found a pesto recipe yet that jumps out yelling "EAT ME!" but when I do- I'll let you know. You can always look at pinterest or google it but I didn't have much luck with either of those.
Other options that don't include basil would be
Enchiladas- a once a week fave at our house. And I'm gonna level with ya- they're never the same twice. I brown hamburger and from there it's different every time. Rotel, green chilies, cheese, tomatoes, different kinds of veggies (your kids/husbands will never know the difference. promise), etc. Top it with some sauce and cheese and go. AMAZING.
Pot Roast
Quesadillas- these are an EVENT at our house. Black beans, green onions and again- any of the above mentioned enchilada fillers make an amazing quesadilla.
We also do at least 1 night a week of no meat. Before you freak out on me and think "O.M.G. This would NEVER work at our house." Just give it a go once. Meat is EXPENSIVE, kind of a pain to cook differently sometimes, and is a source of cholesterol. It's great for protein, don't get me wrong. We're by no means vegetarians here. I mean I grew up raising cattle. BUT- 1 night a week of beans or another protein source is actually budget friendly and very healthy. Again, just think about it.
